Frittata Recipe | Spinach Frittata
1/2 onion chopped
1 garlic clove minced
3 roasted red peppers chopped
large handful of spinach chopped
4 eggs
1/2 cup shredded cheese
In a skillet that can be put under the broiler, saute the onion and garlic in a small amount of oil until lightly browned and tender. About 3 to 5 minutes.
Add chopped roasted red peppers and spinach. Reduce the heat a little and cover to allow the spinach to wilt. Stir occasionally. About 3 minutes.
Crack the eggs into a small bowl and lightly beat. Add the shredded cheese ( cheddar, marble, mozzarella , your choice). Mix. Pour over top of the vegetable mixture and stir slightly. Reduce heat again slightly and cover until eggs are mostly set.
Turn the oven to broil. Have the oven rack about 6 inches from the broiler.
When the eggs are mostly set, place the skillet under the broiler. Watch carefully and when the eggs are set and lightly browned remove from the broiler. Serve.
