INGREDIENTS:
1 cup(120 grams) All-purpose flour
1/4(50 grams) cup sugar
2 teaspoons(5.3 grams) ground cinnamon
1 teaspoon(4 grams) baking soda
1/4(1.4 grams) teaspoon salt
1/2 cup(62 grams) grated Granny Smith apple, peeled
1/2 cup(45 grams) grated carrot
1/2 cup(62 grams) shredded zucchini
1/4 cup(38 grams) chopped walnuts
1/4 cup(60 mL) canola oil
1/4 cup(60 mL) buttermilk, or buttermilk substitute
2 large eggs
Bake at 350 degrees Fahrenheit for about 15 minutes or until a toothpick inserted in the center of a muffin comes out clean.
